South German cuisine/recepies

As I wrote on my homepage, I'm originally from the Lake Constance area but have lived in Munich for 30 years now. Cooking and eating are two of my greatest passions. Due to my connection to my southern German homeland and the Swabian cuisine of my mother, who taught me how to cook from a young age, I'm an avid fan of this cuisine. Southern German cuisine is a regional, hearty, and savory form of home-style cooking, characterized using fresh, local ingredients and traditional recipes. It is known for its rich and filling dishes.

 

Below, I'll list the recipes I enjoy cooking repeatedly. I'll never forget my mom's incredulous look when I told her I bought "ready-made spaetzle***"... Can you buy ready-made spaetzle? My parents always made their own spaetzle.

Dear readers, constructive criticism, praise, or anything else is welcome. Emails with comments like...it can't taste good, it has to have caraway in it, or...how can you cook without bay leaves... will be read and deleted. My recipes—my taste and I certainly don't like caraway. And NO, for private recipes that you publish on the Internet for fun or non-commercially, there is no obligation to list all ingredients.
